This might not work, but it's worth a try:
While in commissioner mode, go to that player's profile page.
Select the 'edit player' tab.
In the righthand column, scroll down to where the various positions' experience is listed.
Find 'Pitcher' and enter 0 for experience.
Exit the player profile and check whether he's still listed as a closer on the lineup screen.
