Just curious - How can a guy who hasn't actually fought (simmed) in my UNI...have a higher ranking than a fighter who has fought and won a simmed fight within the UNI?

If they have more fights than the "minimum number of fights for getting ranked" setting in the database options requires, they will be ranked. The ranking system uses a certain starting value which will automatically be used for these manually added fighters. Some of your fighters who actually fought but lost might have a lower ranking value. So they get ranked below your manually added fighters.
You can got to the statistics screen of a fighter and click the arrow next to the word "Record" to edit the rank. Set it to 9999 and the fighter will be at the end of the ranking automatically.
