Just load them in. Follow the wizard to set up the fields.

NOTE: Excel pre-2007 cannot handle more than 65,536 rows, so you can't load the huge files in.

You are actually better off loading the csv files into Access as you can create lookup tables, and sort data easier, if you know Access.
