One option I have fun with in Single Player mode is to run one team, get it in good shape and then switch to the worst team in the league and continue doing this. Sometimes, even with the flawed AI, it can be quite a challenge because of the random nature of the way prospects develop and the timing of the injury bug - I've had all of my good players wiped out by injuries right before the playoffs start on some championship-calibre teams.
