There is more to it than that. Even with 7-day lineups set, unless you set the option to "No starting subs" the AI will do what it pleases. Just look at the box scores for a week if you need confirmation. Add in injuries and you will find your 1 speed catcher hitting 1st or 2nd. This is one of my biggest peeves about the game. It particularly makes online leagues difficult. I have a 3B hitting 0.430 in one league and he only started 24 of the first 60 games before I had to force start him.
Of course the downside to "No starting subs" is that your catcher or other player will not get rested if necessary. That's easy to fix, put the backup catcher in on Saturdays. If an OL is only doing 7 day sims it's a non-issue.
