Well, in principle, it's simple: the batsman uses his leg to deflect a ball that he believes will knock into the wicket, but one that he doesn't believe he can do anything with using his bat. That being said, the times it is called by the umpire are hard to understand, usually because I am sitting too far away from the action to really see what's going on. I trust the umpire is in a better position.
