I really think there are a lot of them....many of them belong to Cy Young (career wins, career losses, career IP, career CG, etc.). Even when compared to pitchers of his era, he is still about 100 wins, 1300 IP, and 100 CG above everyone else. Ryan's Ks, Walter Johnson's career shutouts(110), and Pete Alexander's single season shut-outs(16) are the other big pitching ones.
As far as batting records, career and single-season triples will be pretty untouchable. Rose's hits, AB, and games played will be tough for anyone to reach. Also, Henderson's season and career SB records will be very tough, unless the game changes a lot down the road. Then, as others have mentioned, Ripken's consecutive game streak and DiMaggio's hit streak.
As far as the most untouchable, I would have to say Cy Young's Wins, IP, and CG.....no one in history has even come close to any of those.....Nolan Ryan would have needed to pitch at least 10 more years to reach the IP of Young!!! Impossible!
