I haven't tried this myself (because I love pitch-by-pitch) but I believe some posters have said that if you hit the 'F1' button during an at bat the game will sim to the end of that at bat. Have you checked the Game Guide?

How often do you want your people to bunt? For the couple plays a game, if that, it won't kill you to use the pitch-by-pitch mode.
