It is possible that a change of venue can make a player happier, and help them perform better. But, on the whole, their performance is going to be more strongly affected by things like opposing pitchers, his own ratings, and the lineup around him, etc.
That's fine with me. This is one of those intangibles that can be hard to measure in real life. Even if a player is bitter about his situation they rarely are dumb enough to say "I'm not playing well because I'm upset." Jose Canseco sort of said it once but then again he never struck me as the brightest light.

Morale (it's "morale" with an "e", not "moral," fwiw) can affect player performance. Unhappy players can e-mail the managers to complain, or even to demand a trade.

Most importantly, it dramatically effects how willing a player will be to resign with you, or to leave another team for free agency.

Of course, it's suprising how much a nice contract extension can improve a player's morale.

Bingo.

And, of course, you can turn off the morale "engine" if it bothers you.

A somewhat related question... is there anything in the game that allows a player to "remember" who he played for and make him more(or even less) willing to sign with his former team?

Yes.

Things like being cut and so forth don't help their opinion on you. On the whole, I'd say there are more things that cause people NOT to resign with you than the other way around.

I can see how this morale module is going to ramp up the challenge of the game, for those who were worried about that in 2006.
