The way I play out my games is to use the 1-pitch mode and then hit a key for each play. This allows a game to be played pretty quicky while letting the player have full control over all managerial decisions.

Since your idea is not currently in the game, this might be the closest you can come to it for now.

That's a nice way to sim the game as well. I try to use all the different methods from time to time.

I believe the closest to the real thing would be to retain strategy and substitution rights while watching the game in full - or even in one-pitch mode.
