pitching question

Ok I have OOTP 8 and I am playing the major league and everytime I sign a player mainly pitchers they have 4 or 5 stars but as soon as they are on my team they drop to one star and are terrible. It has happened with Carlos Zambrano, Dan Haren, Scott Kazmir, Ervin Santana, John Lackey, Jared Weaver, Jake Peavy, Brandon Webb 1B Carlos Pena, Dh David Ortiz. I am only in 2009 so most of these guys werent even 32 yet which should be close to their prime. What am I doing wrong? What can I look out for so I dont spend a ton of money for a good player just for them to be horrible the day after I sign them.
