My league just started using OOTP this past year, but the league itself has been around for more than 10 years. Is there any way I can manually update the league history pages so that it reflects the winners from all our previous seasons?

There is no official way to do this. I know I played around with this in v2007 and someone had a external mod program that would recompile csv files back into the databases correctly. But the dbases have changed a lot since then.
Maybe someone with more dbase skill could help you out.
