Custom Schedules -- How Hard?

if I can ever figure out a way to set up the playoffs the way I'd need to be able to, I want to create the Italian A1 Series. and in order to accurately create this league it's a 54 game schedule, playing on 3 games per week in one of 2 formats

a) thurs, fri, and sat games
or
b) fri single game and sat doubleheader

Would this be possible to create in the game?

Plus I should mention there's 9 teams so there's a team with no games each week

Sure, that could be created in the game. It would just take some time and work to input the games series-by-series or game-by-game. It might be easier to create the file outside the game, but doing it within the game at the Schedule Editor screen would allow for easier tracking of progress. I would still recommend planning out as much as possible before trying to make it.
